Lemon Fruit Tarts and a Simple Summer Party

The days are getting longer and the nights are getting warmer. This time of year is ideal for getting together with friends outdoors to enjoy some good wine and simple delicious food.  I love spending warm summer days and evenings with my neighbors.  I am lucky to be surrounded by some pretty amazing people and after a long winter with not much more than a wave when grabbing the mail, it’s so nice to get outside and catch up. To treat my friends and neighbors I thought a simple summer party would be fitting.  Post dinner decedent treats served with wine and a few simple decorations is all we need to have a delightful evening.

A party doesn’t have to be an elaborate planned event, often times all you need are a few simple foods, some good wine and friends.  This summer party took a little bit of planning, but nothing too stressful that would take me away from enjoying my company.

I started with a white table and added a few strings of pink yellow and black paper circles.  I decorated my table with bright fresh flowers and used dishes already in my rotation. The food and wine are the star of this simple summer party.  Often times choosing eye catching food means you don’t have to stress about decorations.

I made these simple lemon fruit tarts to pair with Cabernet Sauvignon.

Ingredients

• Mini frozen phyllo pastry cups
• Lemon pudding
• Fresh raspberries

Prepare the pastry cups according to the package directions.  They can be crisped in the oven, then cooled before filling.

Prepare the lemon pudding according to package directions, once set fill each pastry cup with pudding.

Top with a fresh raspberry and serve immediately.

In addition to the lemon fruit tarts I laid out an assortment of fresh berries, truffles, dark chocolate, and chocolate covered fruit.  All of these rich flavors blend perfectly with Cabernet.

This party is made for mingling.  Friends and neighbors can stop by after dinner to take in a warm summer evening. They can drink wine and snack on decedent desserts while catching up and enjoying long awaited conversation.
