This refreshing raspberry mint smoothie is the perfect breakfast drink. It combines fresh flavorful ingredients and comes together in just minutes.
Mornings can be busy, especially when I have to get multiple little people ready and out the door. I like to savor my sleep which means I am often rushing in the morning. I tried this refreshing raspberry mint smoothie the other day and it’s my new go-to breakfast drink. It combines protein packed greek yogurt, along with tons of fruit and fresh mint to give it a little kick. There is no prep other than washing a few berries so I can make this while I get breakfast ready for my kids.

I can pour it in my go-to stainless steel tumbler, or if I’m lucky I can enjoy this at home before we start our day.
- 2 cups raspberries
- 1/2 cup vanilla yogurt
- 1 cup coconut water
- 3 leaves mint, chopped
- Add raspberries, yogurt, coconut water and mint to a blender and blend until smooth.
- Pour into a glass and enjoy immediately.

This smoothie is tart so I use nonfat vanilla greek yogurt and coconut water to add a little sweetness. You can also add a bit of honey to sweeten it up. The tartness of your raspberries will affect the flavor as well.
This basic recipe can be tweaked to fit your taste. Try using strawberries or blueberries, or whatever fruit is abundant this season.
